When someone wished you "Happy Holidays", it does not mean they are afraid of offending non-Christians. It does not mean they want to say "Merry Christmas", but are afraid to. It does not mean "I hate Jesus". It means "Happy Holidays".
When someone wishes you well, the proper response is not "I demand you limit your well wishing to the day of my choosing". It is not "I know what you really mean to say, and think you a coward for not saying it".
The proper thing, the adult thing, the decent thing to say when someone wished you "Happy Holidays" is...
"Thank you".
