When you use Gmail, you're agreeing to let Google see and process some of the information that lands in your inbox. But you have control over what Google has: you delete it at will.
Like most online services, you'll have to be 13 and above to be eligible to create a Gmail account. You can, however, set up and manage an account for your child via Family Link.
